Mmm… Banana and White Chocolate Loaf


It’s that time of year again, cold, dark and all I want to do is eat.  Especially Cake.  So once again I have taken to baking and this is one of the easiest most satisfying recipes I know, ask my friends and they’d tell you any excuse to make a Banana Loaf and I’m there.

This isn’t the healthiest recipe but if you have a sweet tooth get stuck in.

Look at the gooey magic.

All you need is:

100g Butter

225g self raising flour

75g caster sugar

Very overripe bananas 2+ (the more you use the more gooey the loaf)

2 eggs lightly beaten

2tbsp honey

Broken White Chocolate

Ingredients to make a Banana and White Chocolate Loaf

Firstly you need to get your hands dirty and rub the flour and butter together until it turns to a breadcrumb consistency.

Butter and Four Loaf Mixture

Then stir in the rest of the ingredients with a big wooden spoon.

Pour the mixture into a greased and lined loaf Tin.

Then bake in a preheated oven at 160°c for 45 mins – hour, cover with foil if the top starts to burn.

Leave the goodness to cool, if it’s a bit too gooey pop it into the fridge to make it set then ENJOY!
